Here are my family's favorite Black Bean Recipes. In addition to being
quite tasty, black beans are power hitters in the fiber department and a high
fiber diet has been shown to have numerous health benefits including lowering
cholesterol levels, regulating blood sugar levels and aiding in weight loss.
They are also loaded with anti-oxidants and have a small amount of Omega 3 fatty
acids. These are just plain good for you. In addition to these
delicious recipes, I love to add them out of the can to a salad.
Black Bean Salad
1 Can (15 oz.) Black Beans, drained
1 Can of Mexican corn
1/2 cup diced red onion
1 garlic clove, minced
1/4 cup olive oil
4 tablespoons red wine vinegar
salt and pepper to taste
Combine all ingredients and mix well
Chill well before serving
Makes 6 to 8 servings.
Easy Black Bean Soup
1 16 ounce can of Black Beans
1 Cup of Water
2 teaspoons minced onion
1 teaspoon lemon juice
1/2 teaspoon salt - or salt to taste
Puree beans and water. If you puree them all the way, the soup will be thin. I
prefer a thicker soup and puree them about half way.
Add other ingredients and heat. Simmer 5 minutes.
